  4. Large pot, dissolve baking soda in 4 cups water. Bring water to good heat, not boiling. Dip each pretzel dough in water for 1 minute. This is the most complicated part and takes practice. Arrange each on buttered baking sheet. Bake 10 - 12 minutes.
  5. Melt butter to brush each, then sprinkle with course salt.
